This is easy and delicious! It's so quick that I was able to whip it together for lunch today!

- 5 1/2 ounces feta cheese
- 2 cups coarsely chopped arugula (or spinach), stems included
- 1 cup diced tomato
- 1/4 cup olive oil
- 2 teaspoons minced garlic (I actually forgot to add this ingredient when I made it and it was still yummy!)
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt
- 8 ounces penne pasta
- Handful of grated Parmesan cheese
- Cook pasta in a large pot of water until al dente.
- Crumble feta cheese into a large serving bowl. Add arugula, tomatoes, olive oil, garlic, and salt and pepper.
- Drain pasta, top with Parmesan cheese, then toss with feta cheese mixture.
Serves: 6
