Ingredients:
(Pastry)
- 4 eggs
- 1 c olive oil
- 1 c milk
- 2 c flour
- 1 tsp salt OR 1 cube (U.S. size - I broke my UK size in half) chicken or vegetable stock
- 1 Tb baking powder
- 2 cans tuna, drained
- Mixed vegetables (I used drained, canned corn since that is what I had)
- 1 medium onion, chopped
- 1 chopped tomato
- 1 cup cheese
- 2 chives, chopped
- Salsa (she didn't make it with this and I didn't have any either, but it was listed as an option)
- Whatever you have on hand... (She even said you could use chicken,turkey, or minced (ground) meat instead of tuna)
- Preheat oven to 200 C (400 F).
- In a blender (or in a bowl, with a hand mixer), blend the eggs, oil, milk, flour, and salt (or chicken stock cube) until the mixture is smooth. Set aside.
- In a large bowl, combine the ingredients for the filling.
- Grease and flour a baking dish (I just used a rectangular, glass casserole dish).
- Add the baking powder to the mixture in #2 and blend for a few minutes.
- Pour half of the batter into the prepared baking dish.
- Add the filling.
- Spread the remaining batter over the filling (First pour some around the edges and then go back and forth over the middle until it is entirely covered).
- Bake in preheated oven for about 30 minutes (I think it took me closer to 45) or until golden brown.
